Black grape variety, one of the oldest and most representative of central-northern Puglia. Of uncertain origin, some argue that its name refers to the Hellenic city of Troy, while other hypotheses make it originate from the city of the same name in the province of Foggia, where it could be a derivative of the Albanian grape "Cruja". Its powerful polyphenolic charge gives it an intense ruby red color, which may even seem "black".

Description

VARIETY: Nero di Troia (Uva di Troia)

DENOMINATION: Puglia IGP

PRODUCTION AREA: Castel del Monte

TRAINING SYSTEM: spurred cordon

SOIL: rocky

PLANT DENSITY AND YIELD: 4500 plants per hectare and 3 kg of grapes per plant

HARVEST: manual harvest in crates, not before the second ten days of October

VINIFICATION: the grapes are de-stemmed and fermented in steel at a controlled temperature of 22-24 ° C for 8-10 days, during which daily pumping over is carried out. Malolactic fermentation takes place immediately afterwards.

MATURATION: 3 months in steel and 1 month in bottle
