ASSEMBLY:Its typicality is explained by the unique balance of the blend of Chardonnay, the symbolic grape of the Maison, and of Pinot Noir vinified in red. The freshness of Chardonnay is fortified by the fullness of Pinot Noir. 45% Chardonnay from the Côte des Blancs and the Montagne de Reims, 55% Pinot Noir from the Montagne de Reims and the vallée de la Marne, of which 18-19% vinified in red. Share of 20 to 25% of reserve wines from the two previous vintages.

TASTING NOTES: Giuseppe De Siena
The color is a delicate garnet pink with slightly orange reflections. The effervescence is lively and light, with a persistent perlage. The nose is fresh and delicate with aromas of exotic fruits (guava, litchi) and small red fruits (raspberry, cherry, wild strawberry). Notes of rose and pomegranate complete its complex and intense aromatic profile.

It is enhanced by thinly sliced ​​raw ham with character (San Daniele or Parma). As an appetizer, a seared salmon or a Japanese-style "tataki" salmon will reveal its many facets. For the main course, it can be paired with a leg of suckling lamb or a fillet of veal cooked at low temperature.
